Around the holidays I do A LOT of baking, and not just cookies. I make cookies, fudge, buckeyes, cakeballs, baklava, pepperoni rolls, peppermint bark, etc. Some of what I make doesn't require being rolled around but some does & a what does has a major tendency to stick to things (especially fudge, dough & cake balls). When these mats say they're non-stick, they mean it.. I haven't had an issue with anything really sticking to it which is really great. These come in 3 different sizes so you don't have to worry about over flouring while rolling out certain things. While baking everything just slides right off with ease.. Even with foil or parchment paper I still had things stick to it & with these, nothing has stuck.
